INGREDIENTS
- 2 x 400g tins cannellini beans, drained (or equivalent dried, soaked & cooker navy beans)
( Any white bean work well. Even Adzuki. When I cook them I love to add some herbs and spices to make them a little more morish. Bay leaves, mixed dried herbs, salt and pepper. Yum!)
- 1.5 cups chicken bone broth ( Pre made is great too!)
- 4 tbs tomato paste
- 1 tbs apple cider vinegar
- 1 ½ tsps. Worcestershire sauce (we use Coles or Melrose brand)
- ½ tsp garlic powder
- ½ tsp onion powder
- ¼ tsp salt (if bone broth is unsalted, add up to ½ tsp salt to taste
- decent crack of pepper (1/4 tsp at least)
- 6 tsps. tapioca flour stirred into ¼ cup filtered water
- optional bacon, sausage, finely chopped veggies of choice. They really all work!
METHOD
- Add all ingredients into a saucepan except for the tapioca flour and water mix.
- Stir over medium heat until simmering, then turn down to low & simmer for approximately five minutes, stirring occasionally,
- Pour approximately 2 tsps. of tapioca & water mix into bean mix, stirring gently to completely combine.
- If consistency isn’t as thick as you’d like, pour in another 2tsps worth of tapioca mix & repeat until desired consistency.
- Serve hot with buttery toast
