Sioux Dollman’s Righteous Pie
This recipe is well worth having in your repertoire.
Smells like lasagna, tastes like a delicious meat pie, but vego. It s the best! Easy, delicious and a magnificent way to use up leftovers too. I have added leftover roast veg and it went to another level.
They devour it, love it in their school lunches. Righteous and winning! Just like dear Sioux. A golden human who makes my heart burst whenever we meet.
If you re not up for making pastry, I have our flat bread recipe below or Sue uses mountain bread sheets.
FRY
- 1 ONION
- 1 GARLIC CLOVE
- 2 TBLSPOONS TOMATOE PASTE
- 1 TBLSPOON MIXED HERBS
- 2 TBLSPOONS TAMARI
ADD
- 1 cup of cooked lentils (I used French Du Puy lentils)
- I love to cook my lentils for some extra flavour with salt, bay leaves, a whole garlic clove, some sprigs of thyme or rosemary
Once this mixture is heated through;
ADD AND MIX
- 2 to 3 eggs
- 1 cup of tasty cheese
Pastry can be flatbread, filo or we whipped up our flatbread recipe and it was the best!
FILL GOOD FLATBREAD RECIPE
- 250gms plain flour
- 1 teaspoon salt
- 1 tablespoon olive oil
- 150mls warm water
Mix into a dough, roll out flat, line your dish,
For the pie lightly cook before adding your Righteous Pie Filling.
Garnish with goat's cheese, tomatoes anything.
