Marimba's Carrot Cake

Brooke asked for a really good cake
and well, it had to be,
Marimba's Carrot Cake!
This cake has been made as a wedding cake and for many a special occasion. It is that good!

Here it is my loves for you to love, enjoy and share. A cake for the heart indeed

  • Marimba's Carrot Cake
  • Ingredients
  • 2 cups of sugar
  • 2 cups of flour
  • 2 tsp baking soda
  • 3 tsp cinnamon
  • 1 1/2 cups vegetable oil ( I use coconut oil)
  • 4 eggs
  • 3 to 5 cups of grated carrots
  • 1 cup chopped nuts
  • Sunflower seeds are optional
  • 2 tsp vanilla

Method
Sift the flour, sugar, b soda, salt and cinnamon. 
Stir in the oil
Add the eggs one at time mixing well after each one
Add carrots, nuts and vanilla
Mix thoroughly with passion
Pour in a floured and greased 13 x 9 x 2 inch pan


Bake at 180 degrees for 30 mins or until you get a clean testing knife

Cool in pan and then remove

Ricotta, Quark or Cream Cheese Icing
  • ⅔ cup ricotta cheese, at near-room temperature
  • 4 tablespoons (2 ounces) unsalted butter, softened
  • 2 to 3 cups powdered sugar
  • ¼ teaspoon freshly grated orange or orange or both zest
  • ¼ teaspoon vanilla extract
  • pinch of salt
Beat cheese and butter until smooth then add icing sugar and zest. Beat until smooth
