This cake has been made as a wedding cake and for many a special occasion. It is that good!

- Marimba's Carrot Cake
- Ingredients
- 2 cups of sugar
- 2 cups of flour
- 2 tsp baking soda
- 3 tsp cinnamon
- 1 1/2 cups vegetable oil ( I use coconut oil)
- 4 eggs
- 3 to 5 cups of grated carrots
- 1 cup chopped nuts
- Sunflower seeds are optional
- 2 tsp vanilla
Method
Sift the flour, sugar, b soda, salt and cinnamon.
Stir in the oil
Add the eggs one at time mixing well after each one
Add carrots, nuts and vanilla
Mix thoroughly with passion
Pour in a floured and greased 13 x 9 x 2 inch pan
Bake at 180 degrees for 30 mins or until you get a clean testing knife
Cool in pan and then remove
Ricotta, Quark or Cream Cheese Icing
- ⅔ cup ricotta cheese, at near-room temperature
- 4 tablespoons (2 ounces) unsalted butter, softened
- 2 to 3 cups powdered sugar
- ¼ teaspoon freshly grated orange or orange or both zest
- ¼ teaspoon vanilla extract
- pinch of salt
