Preparation:

Bring a pot of water to boil.

Slowly add the noodles, stirring gently to submerge.

Once boiling, reduce to a gentle simmer and cook for 7–8 minutes.

If the pot begins to foam, add ½ cup of cold water to bring the temperature down.

Test for doneness, then drain in a colander.

Rinse well with cold water several times until the water runs clear.

Serve hot, cold, in broth, or sautéed with your favourite vegetables or protein.
