As found by Ray Peat Ph.D in the 1970s, with his research into hormones and anti-ageing, a medium sized raw carrot, or its equivalent, eaten daily can lower anti-thyroid and inflammatory substances, reduces liver burden, assists the GI tract and liver to detoxify endotoxin* and estrogen.
If you’re bored of the traditional carrot salad try French Style, it's so yummy!
Grade 5 carrots into a bowl. Finley slice 2 spring onions, diagonally, and add to the bowl with half a cup of chopped parsley finely chopped. Then mix up a dressing of:
- 1.5 tsp dijon mustard
- 1 tbsp honey
- 2 tbsp lemon juice
- 4 tbsp EV olive oil
- 1⁄2 tsp salt
- 1⁄4 tsp pepper
