ANZAC biscuits. An authentic recipe.

These Anzac cookies were the most delicious I have ever made.

 Truly they were, we all thought so too.

 Just like cups of tea were smaller back then instead of our mugs today, these are small and a longer gentler bake.

I do encourage you to follow this recipe exactly with teaspoons, melted butter on the stove and adding the bicarb to the butter and watch it froth up!

You may even perhaps say a little prayer and remember the tradition this recipe represents and the many hands who have made them

The only change I made was I used honey instead of golden syrup.

ANZAC biscuits 
Makes about 35


Preheat the oven to a low 150ºC


Combine the oats, sifted flour, sugar and coconut.


Combine the butter and golden syrup, stirring over gentle heat until melted.


Mix bicarb soda with boiling water, add to melted butter mixture, then stir into dry ingredients.


Take teaspoonfuls of mixture and place on lightly greased oven trays with plenty of room for spreading.


Bake for 20 minutes.


Loosen while still warm, then cool on trays.
